  • 1-1,5 cup Velvet Shank mushrooms cleaned
  • 2 tbsp miso paste white or red
  • 700 ml water or light vegetable broth
  • 1 tbsp soy sauce
  • 1/2 tbsp grated ginger optional
  • 1 green onion sliced
  • soft tofu cubes optional

Method
 

  1. Warm the broth in a saucepan over medium heat.
  2. Add Velvet Shank mushrooms and simmer for 5 minutes.
  3. Lower heat and stir in miso paste (don’t boil once added).
  4. Add soy sauce and ginger if using.
  5. Ladle into bowls and top with sliced green onion.
  6. Add tofu cubes for extra protein if desired.

💡 Tip: Use white miso for a gentle, mild flavor or red miso for deeper winter richness.
⚠️ Note: Velvet Shank (*Flammulina velutipes*) must be accurately identified. Avoid mushrooms growing on contaminated wood.
