- Warm the broth in a saucepan over medium heat.
- Add Velvet Shank mushrooms and simmer for 5 minutes.
- Lower heat and stir in miso paste (don’t boil once added).
- Add soy sauce and ginger if using.
- Ladle into bowls and top with sliced green onion.
- Add tofu cubes for extra protein if desired.
Notes
💡 Tip: Use white miso for a gentle, mild flavor or red miso for deeper winter richness.
⚠️ Note: Velvet Shank (*Flammulina velutipes*) must be accurately identified. Avoid mushrooms growing on contaminated wood.
