Ingredients
  

  • 1 ready Crust or homemade
  • 2 tbsp Olive oil or butter
  • 1 Onion finely chopped
  • 2 cloves Garlic minced
  • 150 g Mixed wild greens nettle, dandelion, sorrel, spinach
  • 3 Eggs
  • 200 ml Cream or plant-based alternative
  • 100 g Grated cheese e.g. Gruyère, Cheddar, or vegan cheese
  • Salt & black pepper to taste
  • Pinch of nutmeg optional

  • 1 Quiche or tart pan 22-24 cm
  • 1 Mixing bowl
  • 1 Frying pan
  • 1 Whisk

Method
 

  1. Preheat oven to 180°C (350°F). Line a quiche pan with the pie crust. Blind bake for 10 minutes.
  2. Heat olive oil in a frying pan. Add onion and garlic, sauté until soft.
  3. Add wild greens and cook 2–3 minutes until wilted. Remove from heat.
  4. In a mixing bowl, whisk eggs, cream, salt, pepper, and nutmeg. Stir in the cheese.
  5. Spread the greens evenly over the pre-baked crust. Pour the egg mixture on top.
  6. Bake for 25 minutes until golden and set.
  7. Let cool slightly before slicing. Serve warm or at room temperature.
