Ingredients
  

  • 2 tbsp dried porcini mushrooms or mixed wild mushrooms
  • 4 tbsp coarse sea salt
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp garlic powder optional
  • Pinch of black pepper or chili flakes optional

Equipment

  • Grinder, blender, or mortar and pestle
  • Clean glass jar
  • Small funnel

Method
 

  1. Grind the dried mushrooms into a fine powder using a spice grinder or mortar and pestle.
  2. Mix with sea salt and herbs in a clean bowl.
  3. Transfer to a glass jar and seal tightly.
  4. Store in a cool, dry place. Keeps for several months.
  5. Use as a finishing salt for pasta, soups, or roasted dishes.
