Ingredients
  

  • 1-2 cups Velvet Shank mushrooms cleaned
  • 1 tbso butter or olive oil
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped
  • black pepper to taste
  • Pinch of salt
  • Squeeze of fresh lemon juice

Equipment

  • Frying pan

Method
 

  1. Heat butter in a frying pan over medium heat.
  2. Add Velvet Shank mushrooms and cook for 3–4 minutes until golden.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Season with salt and black pepper.
  5. Stir in parsley.
  6. Finish with a squeeze of fresh lemon juice.
  7. Serve on toast or as a side dish with roasted vegetables.

Notes

💡 Tip: Add a small splash of white wine while sautéing for extra depth.
⚠️ Note: Velvet Shank (*Flammulina velutipes*) must be correctly identified. Avoid mushrooms growing on polluted wood.
