Ingredients
  

  • 1 cup mild raw honey
  • 1 tbsp fresh or dried ground ivy leaves
  • 1 tbsp fresh wild violets flowers only
  • lemon peel or chamomile optional, for extra calm

Equipment

  • Clean glass jar with lid
  • Wooden spoon or chopstick for stirring
  • fine strainer for later, filtering

Method
 

  1. Place ground ivy and violet flowers into a clean jar.
  2. Warm the honey slightly (not hot) until just pourable.
  3. Pour honey over the herbs and stir gently to remove air bubbles.
  4. Seal and let infuse on a sunny windowsill for 1–2 weeks.
  5. Strain if desired, or leave herbs in the jar for continued flavor.
  6. Enjoy by the spoonful or stir into warm tea or milk.

Notes

💡 Tip: Perfect in evening teas or on toast before bed.
