Why This Recipe Works

Young nettles have a surprisingly mild, earthy flavor that makes an excellent alternative to basil. Blended into pesto, they create a vibrant green base that pairs beautifully with creamy burrata and bright lemon zest.

The pistachios add crunch, while edible flowers make every slice feel like spring on a plate.

Tips & Variations

  • Add roasted asparagus for an extra spring touch.
  • Replace pistachios with toasted hazelnuts or walnuts.
  • Finish with hot honey for a sweet-spicy twist.
  • Use homemade sourdough pizza dough for extra flavor.

Seasonal Moment

This pizza is best enjoyed in spring, when young nettles are tender and bursting with freshness.

Serve outdoors with a chilled elderflower drink and let the colors of the season do the rest.
