Walnut & Wild Herb Bread

A rustic homemade bread packed with walnuts and fresh wild herbs. Perfect for autumn soups, cheese platters, or simply with butter.

Ingredients
  

  • 400 g bread flour white or spelt
  • 7 g dry yeast
  • 1 tsp salt
  • 250 ml warm water
  • 2 tbsp olive oil
  • 80 g walnuts roughly chopped
  • 2 tbsp chopped wild herbs e.g., nettle, chickweed, dandelion leaves

Equipment

  • 1 Large mixing bowl
  • 1 Wooden spoon
  • 1 Loaf tin or baking sheet
  • Oven

Method
 

  1. In a large bowl, mix flour, yeast, and salt.
  2. Add warm water and olive oil, stirring to form a dough.
  3. Knead for 8–10 minutes until smooth and elastic.
  4. Cover and let rise in a warm place for 1 hour, until doubled in size.
  5. Punch down the dough and knead in walnuts and herbs.
  6. Shape into a loaf and place in a greased tin or on a baking sheet.
  7. Cover and let rise for another 30 minutes.
  8. Preheat oven to 200°C (390°F).
  9. Bake for 30–35 minutes until golden brown and hollow when tapped.
  10. Let cool on a wire rack before slicing.

Notes

💡 Tip: Swap wild herbs for garden herbs like parsley, rosemary, or thyme if not in season.
⚠️ Note: Make sure any foraged herbs are 100% safe and correctly identified.
