Sweet Woodruff Infused Honey

Ingredients
  

  • 250 ml mild raw honey
  • 1-2 tbsp dried sweet woodruff leaves
  • 1-2 small pieces sweet woodruff root optional, for deeper aroma
  • tiny strip of vanilla or lemon peel optional

Equipment

  • Clean glass jar with lid
  • Wooden spoon or chopstick
  • Strainer optional

Method
 

  1. Add dried sweet woodruff leaves and small root pieces to a clean, dry glass jar.
  2. Pour honey over the herbs until fully covered.
  3. Stir slowly to release air bubbles.
  4. Seal and infuse for 2–3 weeks in a warm, bright place (not direct sun).
  5. Stir every few days.
  6. Strain if desired or leave herbs inside for a stronger infusion.
  7. Store in a cool, dark cupboard for several months.

Notes

💡 Tip: Add a spoonful to warm milk or chamomile tea for a deeply soothing bedtime drink.
⚠️ Note: Always confirm correct identification of *Galium odoratum*. Consume in moderate amounts.
