Ingredients
  

  • 1 Ripe peaches
  • 1 tbsp Rolled oats
  • 1 tbsp Walnuts or pecans chopped
  • 1 tsp coconut oil
  • Honey or agave syrup for drizzling
  • Fresh mint leaves

Method
 

  1. Preheat the oven to 180°C (350°F).
  2. Cut peaches in half and remove the pits.
  3. Place peaches cut-side up on a baking tray.
  4. Roast for about 10 minutes until soft and slightly caramelized.
  5. Heat coconut oil in a small pan.
  6. Toast oats and nuts until golden and fragrant.
  7. Serve roasted peaches topped with the nut crunch.
  8. Drizzle with honey and finish with fresh mint.
