Nettle fried rice

A quick and flavorful fried rice made with young nettle tops, spring onion, egg, sesame, and soy sauce. An easy wild food dinner ready in minutes.

Ingredients
  

  • 300 g cooked rice preferably day-old
  • 2 handfuls young nettle tops
  • 2 eggs
  • 2 spring onions sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 1 clove garlic minced
  • Black pepper to taste

Equipment

  • Large frying pan or wok
  • Wooden spoon
  • Knife
  • Cutting board

Method
 

  1. Blanch the nettle tops for 30 seconds and drain well.
  2. Heat sesame oil in a large frying pan or wok.
  3. Cook the garlic for about 30 seconds.
  4. Add the eggs and scramble lightly.
  5. Stir in the cooked rice and fry for 2–3 minutes.
  6. Add the nettles and spring onion.
  7. Pour over the soy sauce and toss until everything is hot.
  8. Finish with sesame seeds and freshly ground black pepper.

Notes

💡 Tip: Day-old rice gives the best texture.
✨ Variation: Add mushrooms, peas, tofu, or leftover chicken for a heartier meal.
