🌿 Rosemary Honey (Winter Immunity Syrup)

Warm, resinous honey infused with fresh or dried rosemary. Soothing for lungs, throat, and winter immunity.

Ingredients
  

  • 250 g Raw honey
  • 1-2 sprigs Fresh rosemary or 1 tbsp dried rosemary
  • small strip Lemon zest optional

Equipment

  • Clean glass jar with lid
  • Spoon
  • Small bowl Optional

Method
 

  1. Gently bruise the rosemary sprigs to release their aroma.
  2. Place rosemary (and lemon zest, if using) into a clean jar.
  3. Pour honey over the herbs until fully covered.
  4. Seal and let infuse for 10–14 days, stirring occasionally.
  5. Strain if desired — or leave the herbs inside for stronger flavor.

Notes

  • Use in warm tea, winter milk drinks, hot lemon water, or by the spoon.
  • Store in a cool, dark cupboard for up to 6 months.
  • Do not heat the honey — this destroys enzymes and reduces benefits.
