- Gently bruise the rosemary sprigs to release their aroma.
- Place rosemary (and lemon zest, if using) into a clean jar.
- Pour honey over the herbs until fully covered.
- Seal and let infuse for 10–14 days, stirring occasionally.
- Strain if desired — or leave the herbs inside for stronger flavor.
Notes
- Use in warm tea, winter milk drinks, hot lemon water, or by the spoon.
- Store in a cool, dark cupboard for up to 6 months.
- Do not heat the honey — this destroys enzymes and reduces benefits.
