Method
- Place elderberries, water, ginger, cinnamon, and cloves in a saucepan.
- Bring to a boil, then reduce heat and simmer uncovered for 40–45 minutes, until liquid is reduced by half.
- Remove from heat. Strain through a fine mesh sieve or cheesecloth, pressing out all liquid.
- Let cool until lukewarm, then stir in honey.
- Pour into a sterilized glass bottle or jar and store in the fridge for up to 2 months.
