Ingredients
  

  • 250 g Raw Honey (1 cup)
  • 2 tbsp Dried Thyme
  • 1 Organic Lemon Zest

Equipment

  • 1 Small saucepan
  • 1 glass jar with lid
  • 1 fine strainer

Method
 

  1. Warm honey gently (max 40 °C / 104 °F).
  2. Add thyme and lemon zest to a jar.
  3. Pour honey over, cover completely.
  4. Infuse 2 weeks, shake occasionally.
  5. Strain if desired.

Notes

Use 1 tsp in warm tea or straight from the spoon for sore throats.
