Method
- Wash hawthorn berries and place them in a saucepan with 1 liter of water.
- Simmer gently for 30–40 minutes until berries are soft.
- Strain through a jelly bag or fine sieve overnight – do not press to keep jelly clear.
- Measure the liquid. For every 500 ml liquid, add 500 g sugar.
- Return to a clean pan with lemon juice. Heat gently until sugar dissolves, then bring to a rolling boil.
- Boil until setting point is reached (test on a chilled plate – it should wrinkle when pushed).
- Pour hot jelly into sterilized jars, seal, and store in a cool, dark place.
