🍇 Hawthorn Berry Jelly

A classic preserve made with hawthorn berries, sugar, and lemon. This vibrant jelly is perfect on toast, scones, or as a sweet autumn treat.

Ingredients
  

  • 1 kg Hawthorn berries
  • 1 l Water
  • 500 g Sugar
  • 1 lemon juice

Equipment

  • 1 Saucepan
  • 1 Strainer or jelly bag
  • 1 Wooden spoon
  • Sterilized jars

Method
 

  1. Wash hawthorn berries and place them in a saucepan with 1 liter of water.
  2. Simmer gently for 30–40 minutes until berries are soft.
  3. Strain through a jelly bag or fine sieve overnight – do not press to keep jelly clear.
  4. Measure the liquid. For every 500 ml liquid, add 500 g sugar.
  5. Return to a clean pan with lemon juice. Heat gently until sugar dissolves, then bring to a rolling boil.
  6. Boil until setting point is reached (test on a chilled plate – it should wrinkle when pushed).
  7. Pour hot jelly into sterilized jars, seal, and store in a cool, dark place.

Notes

⚠️ Tip: Use only fully ripe hawthorn berries for best flavor.
