🍄 Porcini Powder

A simple, aromatic seasoning made by drying porcini mushroom slices and grinding them into a fine powder. Adds deep umami flavor to soups, sauces, and risottos.

Ingredients
  

  • Fresh porcini mushrooms sliced thinly

Equipment

  • 1 Dehydrator or oven
  • 1 Grinder or spice mill
  • 1 Airtight jar

Method
 

  1. Clean porcini mushrooms with a brush or damp cloth. Slice thinly.
  2. Arrange slices on dehydrator trays (or baking sheet if using oven).
  3. Dry at 45–50°C in a dehydrator, or at the lowest oven setting with the door slightly open, until completely brittle (8–12 hours).
  4. Grind dried slices into a fine powder using a grinder or spice mill.
  5. Store in an airtight jar in a cool, dark place.

Notes

⚠️ Safety: Only use properly identified porcini mushrooms.
💡 Tip: Use 1–2 teaspoons to boost flavor in risotto, pasta sauces, gravies, and soups.
